I wasn’t that familiar with juicing until I took my Culinary Nutrition Expert course and it wasn’t until about a month ago that my wife and I had purchased our own juicer. I think juicing your vegetables is one of the very best things you can do for your health. Why is juicing better than just eating your vegetables? There are two main reasons:
- You remove the fiber from whatever it is you’re juicing, allowing you to consume MUCH more veggies than you could possibly eat.
- Removing the fiber also allows the nutrients to be absorbed much more quickly into your system.
Here is a basic recipe from the juicing documentary Fat Sick & Nearly Dead (available on Netflix, highly recommended).
Mean Green Juice
Ingredients (1 serving)
- 4 Cups Kale Leaves
- 1 Cucumber
- 4 Celery Stalks
- 2 Green Apples-seeds removed
- 1/2 Lemon-peeled
- 1 Inch piece of Ginger (or less to start)
Directions: Juice it all up and enjoy! As you can see there is a lot of fruit and veggies that go into this one serving juice. Removing the fiber means you won’t get full but get the benefit of having a massive amount of nutrients.
We try to have one juice every morning with our breakfast. I usually don’t even follow any recipes and just juice whatever I have in the fridge that I think will taste okay. I have yet to make a bad tasting juice. Since getting out juicer I’ve been amazed at how good the juices taste. You would think squeezing the juice out of beets, celery, kale, spinach, etc, would taste gross, but it doesn’t! Adding fruit, ginger, lemon, and lime definitely helps to make the juices taste better, but just make sure to use more green veggies than fruit and other things high in sugar. I’ve been thinking of how to explain what I feel after juicing for a while. It’s almost like a clean caffeine high without the crash at the end. Not sure if that makes any sense, but even the fact that I know how much good I’m putting in my body when I juice is enough. Buy some greens, put them through a juicer and start drinking your veggies! Your body will thank you for it.
